EDEN UNLOCKED: One Pie Changes EVERYTHING.

EDEN UNLOCKED: One Pie Changes EVERYTHING.

Paradise, lost through a single bite of fruit, found a surprising echo in a simple apple pie. It wasn’t a planned destination, but a detour sparked by a craving – a craving that unexpectedly led to a garden hinting at something beyond the earthly.

A spontaneous drive with my sisters, meant to be a simple pick-up, quickly transformed into a journey of discovery. The city’s urgency faded with each mile, replaced by a peaceful rhythm and the promise of the countryside. Outlet stores and grocery lists were forgotten, replaced by a willingness to simply *be*.

Our quest for a specific buko pie proved fruitless – they were all sold out. A nearby apple pie became the unexpected pivot, guiding us toward Gourmet Farms, a place steeped in history and a surprising vision.

Gourmet Farms wasn’t just a café; it was a testament to a pioneering spirit. Owner Ernest Escaler, decades ago, dared to believe Philippine coffee deserved a place on the world stage, building the nation’s first commercial roastery. He then championed the farm-to-table movement, a radical idea at the time, prioritizing fresh, local, and organic food.

Expansions and innovations followed, but at the heart of it all lay a hidden sanctuary, a place Ernest envisioned as something truly special. A place beyond the farm, beyond the food, and deeply connected to something more profound.

Lunch was a vibrant experience, a mix of art and culinary delights. Our server, Russell, an artist himself, shared stories as we savored our meal. Ernest, passing by, extended an invitation – a visit to The Sanctuary of St. Joseph, a place he held sacred.

We followed our guide, Ray, down winding paths, past flourishing vegetable gardens and vibrant marigolds – a natural defense against pests. The air shifted, carrying the scent of pine and a whisper of cherished memories. A steel gate marked the entrance to a hidden world.

A statue of St. Joseph greeted us, a welcoming presence by the gate. He held a child reaching for his arms, a tender depiction of care and devotion. It was an invitation to pause, to breathe, and to simply *be* present.

Peace descended with the lush greenery and blooming bougainvillea. Seven steps led to a tranquil pond, alive with peace lilies and vibrant foliage. Beyond, nestled amongst the trees, were accommodations for those seeking extended solace and prayer.

A vine-covered gazebo offered a secluded haven, a table carved from a single tree trunk beckoning for quiet contemplation. It was a space to write, to reflect, to reconnect with the stillness within. But the journey wasn’t over.

The path led past ancient clay water jars, symbols of life and sustenance. An old bell hung nearby, its silent chime echoing through the air. Beyond the walls stood a chapel, inspired by the very site of the Sermon on the Mount.

Antique doors opened into an intimate sanctum, bathed in a soft, ethereal light. An immediate impulse to kneel, to offer gratitude, to simply *receive*. Above the altar, a tilma of Our Lady of Guadalupe hung, a beacon of faith and hope.

Ernest revealed the Sanctuary’s purpose: a place for silence, a space to listen for the divine. He believed St. Joseph, more than anyone, understood the power of direct communication with God. And he didn’t advertise it, trusting that God would guide those He wished to reach.

A profound truth resonated within me. That even a simple apple pie could be a pathway, a gentle nudge toward a place of unexpected grace. A reminder that sometimes, the most sacred discoveries are found not through seeking, but through simply allowing ourselves to be led.
