During a recent tasting, Chef Ramirez described his creation as being built upon “sensations” – a progression from initial freshness and warmth, building to a delightful intensity, and culminating in a final, lingering sweetness. He aimed to capture the essence of a kiss with the menu’s finale.
The experience begins with Salpicon de Mariscos, a vibrant medley of mussels, squid, and shrimp. Tossed in a light lemon vinaigrette with crisp vegetables, the dish offers a delicate tang and a lacy texture, awakening the palate.
Next, the Croqueta de Manchego presents a delightful contrast. Filled with intensely flavored Manchego cheese and spinach, and served with aioli, these croquettes are remarkably light and melt effortlessly in the mouth – a testament to their careful, handmade preparation.
