The culinary landscape is shifting, and a familiar name is taking a bold new direction. The Bistro Group, long known for bringing American dining experiences to the Philippines, is now turning its attention inward, focusing on celebrating the flavors of home.
This transformation is vividly apparent at the newly opened Siklab in Conrad S Maison – a sprawling 260- to 290-seater that represents the largest outlet for The Bistro Group to date. It’s a deliberate move, a pivot born from observing the rising success of Filipino restaurants across the country.
A recent preview dinner revealed a menu brimming with beloved Filipino classics, each dish thoughtfully prepared. The Sinilabang Manok, a vibrant take on Bacolod’s famed inasal, delivered a powerful burst of lemongrass. Their pancit palabok was a contender for the best in the city, and the Pinatisang Manok, a fried chicken perfected with the subtle depth of fish sauce, was remarkably reminiscent of a treasured heritage recipe.
But the delights didn’t stop there. A shared plate of bibingka, light and airy like a cake, crowned with muscovado sugar, coconut, salted egg, and cheese, sparked a unanimous appreciation among diners. It was a testament to the care and attention poured into each creation.
This isn’t the first attempt at a homegrown concept for The Bistro Group. Siklab and Krazy Garlik were initially launched in 2014, but were later closed in 2018. Guia Abuel, the company’s chief operating officer, admits they lacked the experience at the time to nurture local brands.
However, years of operating successful international franchises – including TGI Friday’s and Morton’s The Steakhouse – have provided invaluable lessons. They’ve learned to build a foundation of unwavering standards and a service style that is both friendly and generous, hallmarks of American hospitality.
Now, armed with this knowledge, Siklab is experiencing a resurgence. Following a successful relaunch in Shangri-La Plaza mall and a second location in Cavite’s Evo City, the group is poised for rapid expansion. Four more branches are slated to open by the end of the month in key locations across Metro Manila and Cavite.
The Bistro Group isn’t simply replicating existing Filipino restaurants. They believe their operational expertise, honed through decades of experience with Western brands, gives them a distinct advantage. They aim to elevate the entire dining experience – not just the food, but the service, the ambiance, and the overall atmosphere.
“We’re a matured operator,” Abuel explains. “Food is everything, but it’s not *everything*. It’s the quality of service, the ambiance. It’s a total package.” This is Siklab’s promise: a Filipino dining experience refined by international standards, a spark of innovation in a beloved culinary tradition.
