The beloved French restaurant, renowned for its unique fusion of North African, French, and Scottish cuisine, will cease operations in January, marking the end of an era.
The closure isn’t simply a business decision; it’s the culmination of a remarkable career. Dean Gassabi, the visionary founder of Maison Bleue, is stepping into retirement after 31 years dedicated to the hospitality industry. His passion ignited a culinary journey that captivated Edinburgh for generations.
Gassabi’s story began in the mid-90s with the Pierre Victoire bistro chain, blossoming into a portfolio of celebrated restaurants including Boudoir, Massimo’s, and the Maison Bleue Le Bistrot in Morningside. Each venture bore his signature touch, a commitment to quality and a warm, inviting atmosphere.
However, the decision wasn’t made lightly. Alongside his personal milestone, Gassabi acknowledged the escalating challenges facing the hospitality sector, citing “soaring” operational costs and intense financial pressures.
