After nearly three decades of vibrant flavors and cherished memories, Maison Bleue, a cornerstone of Edinburgh’s Old Town, is preparing to close its doors. The beloved French restaurant, renowned for its unique fusion of North African, French, and Scottish cuisine, will cease operations in January, marking the end of an era.
The closure isn’t simply a business decision; it’s the culmination of a remarkable career. Dean Gassabi, the visionary founder of Maison Bleue, is stepping into retirement after 31 years dedicated to the hospitality industry. His passion ignited a culinary journey that captivated Edinburgh for generations.
Gassabi’s story began in the mid-90s with the Pierre Victoire bistro chain, blossoming into a portfolio of celebrated restaurants including Boudoir, Massimo’s, and the Maison Bleue Le Bistrot in Morningside. Each venture bore his signature touch, a commitment to quality and a warm, inviting atmosphere.
However, the decision wasn’t made lightly. Alongside his personal milestone, Gassabi acknowledged the escalating challenges facing the hospitality sector, citing “soaring” operational costs and intense financial pressures. These realities, combined with a desire for a new chapter, ultimately led to this difficult choice.
Beyond the exquisite dining experience, Maison Bleue distinguished itself through its community spirit. Gassabi proudly highlighted his collaboration with Social Bite, welcoming homeless diners through the “Maison Bleue at Home” initiative. The Morningside branch, a testament to the restaurant’s growing popularity, sadly closed in 2021, a precursor to the current situation. Despite this setback, Gassabi remained steadfast in his dedication to the original Victoria Street location and its loyal patrons.

January 11th is currently slated as the final day of service. The iconic building, located at 36-38 Victoria Street, will then undergo a refurbishment, with plans for Slievemore Properties Ltd to revitalize the space and reopen it under new ownership in June.
